Not all chocolate is bad for you

My name is Julian Bade and i own a chocolate patisserie business called Xocolatyl (sho Ka Lat Til) he's the Aztec god of chocolate.

I've been trading for three and a half years now and i'm slowly trying to get the message across about good chocolate. NOT ALL CHOCOLATE IS BAD FOR YOU!

I make a whole range of chocolate patisserie products including cheesecakes, fudge cakes, brownies and tartlets.

I also make fresh cream truffles which are award winning. Everything is made using organic double cream, butter and free range eggs. I use Belgian chocolate and also bits and pieces of Valrhona (probably the best chocolate in the world), but very expensive. I think it's trading now for around £17 per kilo!

Previous to me opening my business i was a chef for fifteen years, my business isn't some hobby i decided to take up unlike most other cake producers, SORRY!

I mainly worked in large scale operations usually catering for 1000 meals a day. I worked in alot of industry and also high end outlets in Ireland. At the end of my career as a chef i was setting up businesses and organising suppliers etc. I had no intention of entering the world of Ramsey, White or all the other media savvy chefs, not really my cup of tea!

I'm married to my lovely wife Danielle and have two german pointer dogs Paisley and Shankly, yes i'm a Liverpool supporter! Top of the league!

While it may contain anti-oxidants, chocolate is high in both sugar and saturated fat no matter what ingredients, additives or preparation methods that are used.

I think promoting your brand under the banner 'not all chocolate is bad for you' is actually irresponsible, if anything it should be marketed as a luxury treat to be enjoyed now and again.

Have no doubt over the quality of your work.
